Pasta Felicetti
Felicetti uses 100% Organic Durum Wheat, freshly milled into semolina flour, and put into production within 24 hours.
For more than 100 years, the Felicetti family has been making pasta at the foot of the Dolomites. Boasting the cleanest air and water in Europe, this pristine location is key to the family’s extraordinary product that delivers perfect al dente for any sauce.
Manufacturers have continuously optimized the shapes, thickness and textures of pasta, taking into account the different ways in which it can be cooked, to offer culinary delights appreciated by any gourmet.
Felicetti Special Pasta
Felicetti Special Pasta - A line capable of harmonizing the maritime notes of squid ink, the piquancy of garlic and chili pepper, and the sweetness of tomato and spinach with the traditional Felicetti flavor: a perfect blend of taste and refinement.
Ingredients: Durum wheat semolina, dehydrated tomato (3%), dehydrated spinach (2%), water.
Spaghetti
The Felicetti Monograno is a superior product with a stellar reputation, said to be a top choice at premium restaurants. I was delighted to find that line turning up for sale unexpectedly at a major local competitor to Whole Foods. The other Felicetti product lines -- like this Tricolore variety, one of my all-time favorites -- are going to be much harder to find on any store shelves. Which is where Aster Premium comes to the rescue. I've found them great to order from.
Another one I liked a lot, that was something of a surprise for me, was the Felicetti Peperoncino Spaghetti. On an amateur chef hunch, I tried that in a home version of "Dan Dan Mein", paired with an Asian peanut sauce. This worked out beautifully ! (For that I can recommend Stonewall Kitchen's Garlic Peanut Sauce. Add whatever protein that you like, such as shrimp, and/or preferred veggies.)
